The trick to making moist and tender meatballs is using something called a panade, which is simply a combination of starch and dairy—in this case, bread crumbs and milk. You can even use a nondairy milk if you don’t do dairy or a gluten-free bread crumb if you can’t have gluten. For best results, make your bread crumbs from fresh bread instead of using commercially available bread crumbs. Tear the bread into pieces and place them in a blender or food processor and pulse until they make crumbs. Store in the freezer for up to six months or in the fridge for up to five days.
